# How-To:

01 - Preheat oven to 400°F. Line a baking tray with parchment paper.
02 - In a large bowl, combine chicken breasts with olive oil, minced garlic, rosemary, thyme, oregano, salt, and pepper. Toss well to coat.
03 - Place chicken on one side of the prepared tray. Arrange bell pepper, zucchini, onion, cherry tomatoes, and broccoli on the other side. Drizzle vegetables with 1 tablespoon olive oil and season lightly with salt and pepper. Toss to coat and spread in a single layer.
04 - Roast for 20 to 25 minutes, until the chicken is cooked through to an internal temperature of 165°F and vegetables are tender. Remove from oven. Let chicken rest 5 minutes, then slice thinly.

07 - Stir in Parmesan, fresh parsley, and lemon zest. Adjust seasoning with salt and pepper.
08 - Serve immediately, garnished with extra Parmesan and parsley.

# Expert Advice:

01 -
  • Everything roasts on one tray while pasta water boils, meaning minimal cleanup
  • The garlic herb mixture creates a beautiful crust on the chicken that infuses the whole dish
  • Leftovers actually taste better the next day as flavors meld together
02 -
  • Letting the chicken rest before slicing prevents all those delicious juices from running out onto your cutting board
  • Do not crowd the vegetables on the baking sheet or they will steam instead of roast and develop that sweet caramelized flavor
03 -
  • Warm your serving bowl in the oven while everything cooks so the pasta stays hot longer
  • Grate fresh Parmesan right before serving for the best melting texture
